Jimmy's Orange Marmalade Ham Glaze Recipe

Orange Marmalade Ham Glaze


Due to the reduced water content our hams glaze up in a shorter time.

Ingredients

2 to 2 kg half leg of Henderson’s ham
1/2 cup orange marmalade
Zest from 1 orange
Juice from 1 orange
1 tablespoon Dijon mustard
2 cloves garlic, crushed
Salt and fresh ground black pepper
Whole cloves, to garnish

Method

Preheat oven to 165C. Remove the rind from the ham leaving a layer of ham fat about 5mm thick where possible. Use a small sharp knife to score the fat into a diamond pattern, no more than 5mm deep.

Place the marmalade, zest, orange juice, mustard, garlic, salt and pepper in a small saucepan over low heat and warm until marmalade has melted and just starts to bubble. Once this happens remove from the heat.

With a glazing brush spread the glaze over the ham then place a clove in the middle of each diamond of fat.

Place the ham on a rack in a baking dish and fill with enough water to just cover the base of the dish. Cook for 30 minutes, brushing regularly with glaze mixture until the surface of the ham is golden and caramelised. Set aside to rest. Serve warm or let cool to slice for cold cuts.
